Bleu d'Auvergne AOP is an emblematic cheese from the Massif Central, made from raw or pasteurized cow's milk .
Its blue-green marbled veined paste reveals a smooth texture and a taste that is creamy, intense and balanced , marked by notes of mushrooms and undergrowth.
🏔️ Origin & Refining
- Origin: Auvergne , between Cantal and Puy-de-Dôme
- Spiked with Penicillium roqueforti to develop the characteristic marbling
- Aging in a humid cellar for at least 4 weeks
- Protected Designation of Origin (PDO) label since 1996
