In a market where the term "artisanal" is often misused, we owe you complete transparency regarding the origin and production of every product we select for you.
What is a "handmade" product to us?
For Le Cornichon, craftsmanship is not just a marketing ploy. It rests on three concrete and verifiable pillars.
Passed-down expertise : Our partner producers have mastered traditional techniques, often passed down through generations. Whether it's the slow cooking of duck confit or the delicate aging of sheep's cheese, every step counts. These methods take time, but they guarantee a depth of flavor impossible to replicate industrially.
Human-scale production : We work exclusively with small businesses and family farms. In practical terms, this means batches of 20 to 50 jars of jam, lots of charcuterie weighing only a few dozen kilos at most, and production methods that respect natural rhythms. At Jean-Yves's farm, our confit producer in the Gers region, each jar is prepared in small quantities and individually checked before shipping.
Uncompromising ingredients : Take the label of one of our artisanal products, a country-style terrine for example. You'll read: pork, pork liver, salt, pepper, garlic. Five ingredients. Now compare that to an industrial version: flavor enhancers (E621), dextrose, flavorings, stabilizers (E450), antioxidants (E316), preservatives (E250)... The difference is striking. For us, craftsmanship begins with the ingredient list: short, clear, and natural.
Why we shun industry standards
The agri-food industry responds to imperatives of profitability, standardization, and long-term preservation. These constraints lead to compromises that we categorically reject.
Additives and preservatives : Mass production requires products that travel long distances, remain on shelves for extended periods, and maintain a perfect appearance. This necessitates the addition of chemicals to stabilize, color, thicken, or extend shelf life. Our artisanal producers don't need these: their products are made in small batches, delivered quickly, and consumed within a reasonable timeframe. Freshness replaces chemicals.
The standardization of taste : The industry aims for a uniform taste, recognizable throughout the year. A jar of industrial apricot jam will taste exactly the same in January as in August. Conversely, the artisanal jam made by Marie-Claire, our producer in the Ardèche region, varies subtly depending on the harvest, the year's weather, and the ripeness of the fruit. This variation is not a flaw: it is the hallmark of life, naturalness, and authenticity.
Disregarding the seasons : Industrial production operates on a just-in-time basis year-round, often using frozen or imported raw materials. Our artisans, on the other hand, work in harmony with the seasons. Dried porcini mushrooms arrive in autumn, asparagus in spring, and sun-dried tomatoes in summer. This respect for the natural calendar guarantees products at the peak of their taste and nutritional quality.
How we select our partner producers
Our commitment to French craftsmanship is not based on fine declarations, but on a rigorous and transparent selection process.
On-site visits : Before listing a producer, we personally visit their workshop or farm. We observe the production conditions, hygiene, and adherence to traditional recipes. We want to see the hands at work, smell the authentic aromas, and understand the process from start to finish. These visits create a relationship of mutual trust and allow us to tell the true story of each product.
Rigorous tastings : A product only joins our catalog after passing our taste tests. We look for the perfect balance of flavors, the ideal texture, that little something extra that makes all the difference. We systematically compare our products with what's already on the market to ensure we truly offer the best.
Ethical and environmental criteria : Beyond taste, we assess our producers' commitment. Do they use responsible packaging? Do they pay their employees fairly? Do they help preserve threatened regional know-how? These questions are just as important as the final taste of the product.
This selection process explains why our catalogue contains only a few hundred carefully chosen items, whereas an industrial site would offer thousands without distinction.
Understanding labels: A guarantee of quality for the German consumer
French and European labels may seem complex, but they are valuable benchmarks for identifying local artisanal products.
PDO and AOC (Protected Designation of Origin) : These labels guarantee that a product comes from a specific geographical area and adheres to strict specifications. For example, Comté PDO cheese can only be made with milk from Montbéliarde or French Simmental cows, raised in the Jura Mountains, and aged for a minimum of four months. These requirements effectively exclude any mass industrial production. When you see this label on our website, you know you are buying a product rooted in a specific region and centuries-old expertise.
The European Organic Label (Öko-Verordnung) : For our German customers accustomed to the rigorous standards of Bioland or Demeter, the European organic logo (the green leaf with stars) offers a comparable guarantee. Our organic honeys, jams, and oils comply with the ban on synthetic pesticides, GMOs, and artificial additives. This label is a natural fit with artisanal production: small-scale organic producers already prioritize gentle methods and respect for living organisms.
Protected Geographical Indications (PGIs) : Less restrictive than Protected Designations of Origin (PDOs), PGIs nevertheless certify that a significant part of the production process takes place in a specific region. Our Puy green lentils, for example, benefit from a unique volcanic terroir that gives them their melting texture and nutty flavor.
Medals and competitions : The Concours Général Agricole de Paris, a true French institution, awards prizes each year to the best regional products after blind tastings conducted by expert juries. A gold or silver medal is not just a decoration: it is objective recognition of superior quality. Compare this to a factory that produces 10,000 units per day with automated machines and ingredients bought at the lowest price on global markets: the price difference reflects a difference in reality.
